It can be used in food as an emulsifier, encapsulating agent, thickener, stabilizer, adhesive, and suspending agent. As an encapsulating material, it provides a sustained-release effect for flavors and fragrances.

No heating required; dispersible in cold water; the solution is a clear liquid. It exhibits excellent emulsifying, thickening, and stabilizing properties in both acidic and alkaline solutions, making it suitable for emulsification needs across a wide variety of food products.

Containing an octenyl group and a succinic acid group, it exhibits dual hydrophilic and lipophilic properties, with excellent solubility in water. As an emulsion stabilizer, it can replace gum arabic. Once dissolved, it does not revert to its original state, boasts high transparency, and demonstrates good shear stability at both high and low temperatures.

It exhibits ideal properties in frozen foods, serving as a fat substitute with excellent freeze-thaw stability, resistance to freezing, no layering, strong heat resistance, stable and long-lasting suspension, high acid resistance, glossy emulsion, and the ability to enhance product thickness and provide a smooth, lubricious mouthfeel.

Sodium starch octenylsuccinate exhibits excellent synergistic effects when combined with other surfactants, pH adjusters, buffers, and the like; there are no compatibility contraindications.
